Lamb’s Ear 'Helen Von Stein' (Stachys byzantina 'Helen Von Stein', also known as 'Big Ears'), is a standout herbaceous perennial celebrated for its plush, silver-gray foliage and remarkable durability. Unlike standard Lamb's Ear, the 'Helen Von Stein' cultivar boasts extra-large, thick leaves—growing up to twice the size of the species—that are covered in a dense, velvety layer of soft, white woolly hairs. It forms a lush, low-growing carpet six to ten inches tall that spreads up to thirty inches wide, offering an irresistible tactile element and cool color contrast to sunny garden borders.
In landscape design, 'Helen Von Stein' is highly favored as a low-maintenance groundcover, path edging, or rock garden accent. A key advantage over other cultivars is that it rarely blooms; by remaining almost completely non-flowering, the plant directs all its energy into maintaining a clean, uniform mat of silver leaves without sending up messy, top-heavy flower spikes that require deadheading.

PLANT CARE & CHARACTERISTICS
Light Requirements: Full Sun to Partial Shade (Requires 4–6+ hours of direct sunlight daily; tolerates partial shade in extremely hot climates).
Water Requirements: Low; requires minimal watering once established; strictly avoid overwatering or crown dampness.
Drought Resistance: High (Dense wooly leaf hairs reduce transpiration, giving exceptional drought tolerance).
Soil Type: Highly adaptable; prefers dry to average, lean, sandy, or gravelly soils; pH 6.0–7.5; demands sharp drainage and cannot abide wet, soggy ground.
Deer Resistance: Exceptional (Fuzzy, felt-like leaf texture naturally deters deer and rabbits).
Pest / Disease Resistance: High resistance to insects and pests; susceptible to leaf melt, crown rot, and fungal decay in high humidity, wet soil, or stagnant air.
Pollination: Insect-pollinated (when sporadic blooms appear, visited occasionally by bees).
Pruning: Minimal maintenance required. Remove spent or tattered winter foliage in early spring to clean up clumps. Promptly remove any sporadic flower stalks if desired to maintain a uniform foliage mat.
